1 small onion, finely chopped

1 clove garlic, crushed

1 tbsp olive oil

1 small lemon, zest and juice

1 400g tin butter beans, drained

1 tsp dried mixed herbs

Salt and black pepper

 

Gently fry the onion, garlic and lemon zest in the oil for 5 minutes, until soft.  Add the butter beans, lemon juice and herbs and stir gently for a minute or two.  Remove from the heat and cool.

 

Using a blender or food processor, blend the mixture until it is creamy, adding a little more oil or water to get the right consistency.  Add the salt and pepper and stir in.
